Dagestan supports farm producing 48 varieties of urbech

Thanks to the state support received five years ago, the Dido — Power of Caucasus agricultural cooperative in the outskirts of Makhachkala has established the production of 48 varieties of the traditional Dagestanian urbech (nuts or seeds, sometimes both, grated into a smooth paste).
According to the regional Ministry of Agriculture, the company uses modern equipment while maintaining traditional methods of seed and nut processing in stone millstones. As to Zagra Abdurakhmanova, the commercial director of the company, the main goal is to preserve ancestral traditions.
The stone millstones grind seeds and nuts exactly as they have been done for centuries, with the only difference that they are driven by electricity instead of water, as it was in the old river mills. In other respects, the technology remains unchanged. We produce pistachios, walnuts, sunflower seeds, apricot kernels, and hazelnuts. However, the most popular variety is made from common black flax and is preferably sugar-free, Abdurakhmanova says.
